Cabernet Sauvignon Reserve, California - 2007
Fruit:
81% Cabernet Sauvignon /19% Merlot from Monterey County and Lake County.
Harvest:
Hand picked in the cool early morning. Brix: 24.6º. Acid: 0.6 grams/100ml.
Fermentation:
Wine was fermented slowly at moderate temperatures to ensure a rich fruity varietal character. Aging: Aged 100% in French and American 59 gallon oak barrels for 16 months.
Tasting Notes:
Produced from a blend of Cabernet Sauvignon and Merlot grapes using our finest lots of the 2005 harvest. The deep garnet color and flavors of cassis, oak and black fruit are a result of small lot bin fermentation, giving this wine the balance of a classic Bordeaux style wine with a smooth and lingering finish.
